What's For Dinner? Try this fabulous Bison Stew from Fuel For Life, LLC

For a hearty meal that feeds the body and warms the soul, give this delicious Bison Stew a try tonight! Lauren Simms of Fuel for Life, LLC, nutritionist and personal trainer extraordinaire creates some of the most amazing, healthy, satisfying meals that are also simple to make. Her recipies are nourishing and supportive of just about every weight and fitness goal out there.

I invited Lauren to share her beautiful Bison Stew reicpe with Watching Dr Oz. It's the time of year for warming soups and stews!

Bison Stew
by Lauren Simms with Fuel for Life, LLC


2 lbs buffalo or grass feed beef stew meat
1/3 cup cooking oil or butter
4-8 cups Beef broth
1/2 cup celery, chopped
1 cup onion, chopped
1 tablespoon salt
¼ teaspoon pepper
1 tablespoon paprika
4 potatoes, peeled and cut
4 carrots, chopped
Corn starch or flour to thicken to desired consistency

Sauté stew meat in cooking oil or butter. Add stock and simmer for 45-60 minutes, or until meat is tender.

Add in vegetables and spices. Whisk in corn starch or flour, a few spoonfuls at a time, to thicken stew to desired consistency.
