I invited Lauren to share her beautiful Bison Stew reicpe with Watching Dr Oz. It's the time of year for warming soups and stews!
Bison Stew
by Lauren Simms with Fuel for Life, LLC
Ingredients
2 lbs buffalo or grass feed beef stew meat
1/3 cup cooking oil or butter
4-8 cups Beef broth
1/2 cup celery, chopped
1 cup onion, chopped
1 tablespoon salt
¼ teaspoon pepper
1 tablespoon paprika
4 potatoes, peeled and cut
4 carrots, chopped
Corn starch or flour to thicken to desired consistency
Sauté stew meat in cooking oil or butter. Add stock and simmer for 45-60 minutes, or until meat is tender.
Add in vegetables and spices. Whisk in corn starch or flour, a few spoonfuls at a time, to thicken stew to desired consistency.
